Is there a quick link hotkey for other documents?
main question:
Entering @ or # into a document brings up an auto-complete enabled dialog for tagging users or mentioning chat channels (respectively)
Is there something like that for adding links to other documents and/or tasks?
I can copy the link from the other doc/task, but that means leaving what I'm currently doing, finding the item, getting the link, going back and pasting it in.
secondary questions:
1. will links to documents ever support #anchors to different headings in the doc?
2. can the popup on hovering over a document / task link be customised? (I'd like to see the first couple of lines of text rather than when it was last updated)
3. is commenting in documents on the roadmap?

Unfortunately, no, there is no auto-complete dialog for such entities as tasks or documents at the moment. Feel free to subscribe to the https://youtrack.jetbrains.com/issue/SPACE-11942/Autocompletion-of-Space-entities-in-documents ticket to get further updates.
The Space documents already support this. Feel free to use one of the heading levels from the "Heading" button to see the syntax.
Unfortunately, no, there is no way to customize it or force Space to show other details in the popup. We have registered the YT ticket below so that the team can consider implementing it: https://youtrack.jetbrains.com/issue/SPACE-18976/Customizable-view-for-hover-popup-on-links
